Say I had a place bet on the 6, the point (not 6) was rolled, and my bet was turned off until the next point. I bypass the come out roll, and a 6 is rolled, so the point is the 6. Why does the dealer always want to move my previous "off" place bet from the 6 to the 8 (or just take it down all together)?
I can see why if I had a pass line bet and the 6 became the point (I would obviously prefer the pass line with odds over the place bet). But if I bypassed the come out roll, the small ($12 let's say) place bet would pay better than a put bet of similar magnitude (in other words less than the 5x odds required to get the house edge even) after the point of 6 was rolled. Am I wrong? Is there some other reason that perhaps I am missing?

I doubt if the dealer really cares if you leave it, move it or take it down. However, about 99% of players will want to move it or take it down, so he might assume that you will also.

If I understand you correctly, you as saying that you did not make a pass line bet on the come out roll, and as result even though the point is now six the only action you have on the six is your place bet. Since the $12 place bet would pay $14 on a six, the only way you could get the same return on the pass line would be to put $2 on the pass line and $10 in free odds.
Since most casinos have a minimum greater than $2 for the pass line, you are correct that if you want to keep your wagers small you are better off leaving the place bet on the six even though it is now the point.
Dealers are used to having place bettors also having a line bet. Simple as that. They're assuming that you're better off with your pass line/odds bet than you would be with a place bet and they're trying to help you. (Granted, they're clearly not paying enough attention to YOU.) In your case, you're absolutely right. Although they would gladly allow you to make a pass line bet after the come-out roll in lieu of your place bet, if it's a $5 table and you bet $5 on the pass line with a $10 odds bet (O.K., not quite a $12 total), and the six was rolled, you'd win a whopping $17 for your $15 risked, a 13.33% return. Meanwhile, your $12 place bet would win $14, a 16.67% return. Again, you're right, but I think that the dealers are just trying to help with their "knee-jerk" response to a point being established that has place bets on it.
